The best bars after midnight operate on a different set of rules. The bar staff are in their element, the music is louder, the conversations are more honest, and the drinks are poured with a generosity that does not appear on the earlier menu. We have stayed out in every city on this list past the hour when sensible people go home. These are the rooms that made it worth it.
Best Late Night Bars in New York
New York has a 4am licence which is the single most important fact about its late night bar scene. What this means in practice is that you can drink until 4am at a proper bar, by which point the city is still producing the kind of conversations you will be telling people about for the rest of your trip.
01
Employees Only
West Village$$$Open until 4am / Speakeasy
The hidden door entrance, the fortune teller in the front room, and the cocktails that get better as the night goes on — Employees Only is one of the bars that defines New York after midnight. The kitchen stays open until 3:30am, the cocktail list is encyclopaedic, and the staff have been doing this long enough to seem effortless. The back room fills up after 1am with off-duty bartenders from across the city, which tells you everything you need to know about the quality.
Order: The Ginger Smash — house ginger beer, lemon, and your choice of spirit
02
The Wren
NoHo$$Open until 4am / Neighbourhood
A NoHo bar that runs at full volume from 10pm until 4am without ever feeling out of control. The Wren has a back garden heated in winter and a beer and cocktail list that holds up at any hour. The crowd is mixed and genuinely good-natured — a quality that becomes rarer as the night progresses in most cities, but here it persists to closing. One of the few late-night bars in Manhattan where you can have a proper conversation.
Order: House Negroni with a Sixpoint beer chaser
03
Bar Goto
Lower East Side$$$Open until 2am / Japanese cocktails
Kenta Goto's intimate Japanese-American cocktail bar is at its best after midnight when the room fills with off-duty hospitality workers and people who know exactly what they came for. The cocktails use Japanese whisky, sake, and shochu in combinations that are both technically exacting and genuinely easy to drink. The cherry blossom cocktail has been on the menu since opening and is still the most-ordered drink at last call.

Late night, early evening, or any hour in between — our complete guide covers every significant cocktail bar in the city.
Berlin does not have a closing time, and Madrid treats midnight as early evening. Both cities have developed bar cultures that are specifically calibrated for the later hours — bars that are more alive at 2am than at 9pm, and where the best people arrive after midnight.
04
Bar Amerika
Mitte, Berlin$$No closing time / Counter bar
A narrow Mitte bar with no closing time and a regulars list that includes half the music industry in Berlin. Bar Amerika trades in American bourbon and rye, good beer, and a playlist that starts at moderate volume and gradually increases through the night. The counter is twelve seats and gets fully occupied by 1am. It is the kind of bar that makes Berlin's no-closing-time policy feel like it was designed for exactly this room.
Order: Wild Turkey 101 neat with a local Pilsner back
05
El Lounge de Ron
Malasaña, Madrid$$Open until 3am / Rum bar
The best rum bar in Madrid, on a Malasaña side street that fills with neighbourhood regulars from 11pm onwards. The list runs to over eighty rums — aged Spanish, Cuban, Jamaican, and Barbadian — and the cocktails are built around the spirit rather than hiding it. At 1am the bar is at full capacity and the conversations in the back corner have the quality of things said between people who are glad to be exactly where they are.
Order: Ron Collins — aged rum, elderflower, lime, and soda
06
Silencio
2nd Arr., Paris$$$Members / Open until 6am
David Lynch designed this private members bar under the Paris 2nd, and the aesthetic is exactly what you would expect — velvet, curved walls, 1950s American references filtered through a European sensibility. The membership rule relaxes after midnight when the door opens for walk-ins with a convincing presence. The cocktails are expensive and excellent. The music transitions from jazz to electronic at 1am. One of the few bars in Paris that feels genuinely cinematic.
Order: The house Sazerac variation — Rye, Peychaud's, absinthe rinse

After Midnight in New Orleans and Chicago
American cities with strong late-night bar cultures — New Orleans has no closing time, Chicago has a 4am licence for select venues, and both cities have bars that fully understand the particular quality of a drink after midnight.
07
Cure
Freret Street, New Orleans$$$Open until 4am / Cocktail bar
The bar that helped establish the serious cocktail scene in New Orleans, and still the best destination after midnight in a city that is not short of late-night options. Cure trades in classic cocktails made with precision — the Ramos Gin Fizz requires five minutes of shaking and they do it every time without complaint. At 2am the bartenders are still engaged, the ice is still perfect, and the drinks are still worth the price.
Order: Ramos Gin Fizz or the house Old Fashioned variation with Louisiana rye
08
The Violet Hour
Wicker Park, Chicago$$$Open until 2am weekdays / 3am weekends
Chicago's most influential cocktail bar, behind an unmarked door in Wicker Park, where the house rules — no loud phone calls, no standing at the bar, jackets optional but appreciated — create a deliberate atmosphere that the drinks then justify completely. The Violet Hour is the bar that made Chicago take cocktails seriously, and a decade later it still sets the standard. Book in advance for Friday nights; walk in any weeknight after 11pm.
Order: The West Side — bourbon, yellow Chartreuse, lemon, honey
09
The Wrecking Crew
Red River District, Austin$Open until 2am / Live music
A Red River District dive with live music every night and a cover charge that rarely exceeds five dollars. The Wrecking Crew draws the Austin musicians who are not playing a set tonight but want to hear someone who is. The sound system is better than the building suggests. The beer is cold and cheap. After midnight it becomes the best show in Austin — the kind of bar that makes the city's live music reputation make sense.
Order: Lone Star in a can and whichever local whisky is on special
10
The Night Shift
River North, Chicago$$Open until 4am / Late crowd
A Chicago 4am bar that has figured out how to be a good bar rather than just a late bar, which is rarer than it sounds. The cocktail list holds up at any hour, the staff remain functional and pleasant through to closing, and the crowd after 2am is a mix of industry workers, musicians, and the kind of night-owls who know where to go. One of the few 4am rooms in the city where the drinks are worth ordering rather than purely functional.
Order: Whatever they have on draft from Revolution Brewing
Explore the best hidden gem bars
Late night discoveries are often hidden gems. Our full hidden gems guide covers the bars that reward the search.
The best bars after midnight are not the ones with the longest hours — they are the ones that maintain their quality when everything else starts to decline. Staff who are still engaged at 2am, drinks that are still made with care, and rooms that hold their atmosphere without tipping into chaos. Every bar on this list meets that standard.
Our practical advice: eat before you go, pace properly through the earlier part of the evening, and arrive at the best bars after midnight rather than trying to extend an evening that started at 6pm. The late-night bar culture in every city on this list is its own distinct experience, not an extension of the early evening one.
